Steak Bruschetta with Spaghetti Squash

When I saw this recipe on Paleo Table today, I was determined to make it and make it scrumptious! For the win, the hubby even asked for seconds!!!!!!!! I believe this is the first paleo meal he has asked for more of!

I took three small-ish sirloin steaks and grilled them to 165 degrees. While the steaks grilled, I pierced a spaghetti squash all around and microwaved it for 15 minutes. ( I prefer cutting it in half lengthwise and baking it face down in a 13x 9 pan filled with a little water) I diced up 6 Roma tomatoes and about 1/4 of a yellow onion. Then I chopped up about 4 leaves of fresh basil, 2 cloves of garlic, and added a dash of salt, pepper, and Italian seasoning. When the steak was done cooking, I diced it up and added it to the tomatoes, then drizzled with olive oil, balsamic vinegar, and a splash of red wine vinegar. I set that in the fridge while I discarded the squash seeds and then scooped out all the yummies of the spaghetti squash. I also tossed the squash with about 1 1/2 tbs of butter....I know, I know... topped the spaghetti squash with some of the bruschetta mixture from the fridge and voila! It was divine.

I hit the grocery store on my way home from work and scored Rocky Ford Cantaloupe and Palisade Peaches (!!!!!!!!!!) on sale along with a bunch of different ColoRADo produce. I refuse to give in to fall, and I'll be buying ColoRADo produce in bulk until it is no longer available! Prepare yourselves for very unappetizing presentations of delicious ColoRADo produce in the near future!
